That starchy tuber – the Potato. I love digging up potatoes. It’s like a treasure hunt. This weekend we extended our potato bed and planted a new set of seed potatoes. We are fortunate to have a mild winter, so while the plants may freeze, if we put enough straw over the bed, they will still remain green right under the straw’s surface. When the soil warms back up they’ll take off and will give us a large harvest. We harvest our potatoes as needed. We find it too difficult to get them all out (our strawberry patch still has potatoes growing in among the runners) so we just leave them in the bed – their permanent home. Small tubers that we dig up go right back into the soil.

Mmmmm. We grew some awesome purple potatoes, and fingerlings last year. Also some cool other starchy tubers (oca, mashua). Need to get this year's seed potatoes started soon!
Never met a potato I didn't like! Had trouble sourcing seed potatoes this fall. You're right, we can grow them year around here, but sourcing seed spuds in the late season has been tricky. Next year, we'll remember to save our own!

I found volunteer taters in a couple of the barrels we moved into the makeshift greenhouse, woot! Organic yukon gold we cut up into eyes 🙂 I thought we'd already harvested the 'bumper crop' of 10 potatoes months ago, but nope, the plants are coming back up.
i'm trying potato towers this year, but am not seeing any sprouts yet 🙁
